# What You Need:

→ Bread

01 - 2 slices rustic country bread or sourdough

→ Avocado

02 - 1 ripe avocado
03 - 1 teaspoon fresh lemon juice
04 - Salt and freshly ground black pepper to taste

→ Cheese

05 - 3 ounces fresh mozzarella, sliced

→ Garnish

06 - 1 tablespoon extra virgin olive oil

# How To Make It:

01 - Set oven broiler or toaster oven to high heat.

04 - Distribute smashed avocado evenly over toasted bread slices.
05 - Layer mozzarella slices on top of the avocado.
06 - Place tartines on a baking tray and broil for 2 to 3 minutes until mozzarella melts and begins to bubble.
07 - Drizzle with olive oil and top with fresh basil leaves and crushed red pepper flakes if desired.
08 - Serve immediately while warm.

# Expert Tips:

01 -
  • It comes together faster than most people can decide what to eat.
  • The contrast between creamy avocado and melted cheese is genuinely addictive.
  • You probably already have everything you need sitting in your kitchen.
  • It looks fancy enough to serve guests but requires almost no effort.
02 -
  • Don't walk away from the broiler, because mozzarella goes from perfectly melted to burnt in about thirty seconds.
  • Use ripe avocado or the whole thing falls flat, there's no faking it with hard fruit and extra lemon.
  • Toast the bread well, or the moisture from the avocado will turn it into a soggy mess by the time you sit down.
03 -
  • Use a fork to mash the avocado instead of a blender, you want texture not baby food.
  • If your mozzarella is watery, pat it dry with a paper towel before layering it on, otherwise you'll end up with a puddle.
  • Add a tiny pinch of garlic powder to the avocado mash if you want a subtle savory boost without overpowering the freshness.
